The source is a spreading evergreen tree reaching 15-20 m high. While flowers are mostly unisexual, bisexual flowers also occur naturally.

Within these plantations, the fruits develop as fleshy drupes. Once ripe, they turn yellow and split to expose a purplish brown seed.

This shiny seed is encased in a vibrant, net-like red aril. This specific part of the fruit is known globally as the spice Mace today.

The tree uniquely yields two distinct spices. The first is Nutmeg, which is the inner kernel found inside the seed's protective shell.

The second spice is mace. This is the crimson-colored, leathery outgrowth that covers the exterior shell of the seed before processing.

Using whole seeds allows you to grate only what you need. This practice preserves the volatile oils and warm, woody flavor profiles.
